When a baker from the Norwegian national baking team opens his own shop, queues follow. Kveitemjol - simply "wheat flour" in Norwegian - opened in April 2020, mid-pandemic, at Fjordalleen 10 on Aker Brygge, and quickly became one of Oslo's most talked-about bakeries. Founder Nils-Olav Heggdalsvik built the place around sourdough and top-shelf raw ingredients, and the head-baker tradition continues with national-team bakers in the bakehouse. The counter is the attraction: sourdough loaves regularly named among the city's best bread, croissants with a serious claim to Oslo's finest, pain suisse, pain au chocolat, kanelknuter and kardemommeboller, skolebrod and sourdough sandwiches. The viral hit is the cube croissant - filled with plum jam and coconut panna cotta - which routinely sells out before lunch. Freshly ground coffee runs alongside, breakfast starts at 08:00 on weekdays, and pre-orders cover sandwiches, cakes and larger bakes for events. The room works both ways: sit down for a pause with harbour life passing outside, or grab and go along the Aker Brygge boardwalk towards Tjuvholmen and the Astrup Fearnley museum. Weekends get crowded - the combination of fjord-front location and pastry reputation sees to that - so early visits are the local trick. Hours run roughly 08:00-16:30 weekdays, 09:00-16:00 Saturdays and 10:00-16:00 Sundays. The bakery has since 2023 been part of the Stavanger-based Kanelsnurren bakery family, with the founder staying close to the craft. The timing turned out to be part of the story: opening a takeaway-friendly craft bakery in the first pandemic spring met a city suddenly obsessed with small daily luxuries, and Kveitemjol rode the wave of Oslo's sourdough renaissance to the front of the pack. The Aker Brygge address gives it a customer mix few bakeries see - office workers on coffee runs, harbour tourists, and pastry pilgrims who cross the city for the cube croissant drop.
