After four years snapping the ball as an NFL center for the Houston Oilers and Philadelphia Eagles, Ron Lou spent decades reinventing himself as a restaurateur, launching breakfast spots, a sports bar and several Chinese restaurants. In 2013 the California native poured everything he had learned into something new, opening the first Angry Crab Shack in Mesa, Arizona, determined to build a concept that was not just another wing, burger or pizza place. His idea was to bring the hands-on seafood boil to the desert, fusing the bold flavors of Asian cuisine with Cajun tradition into a distinctive Asian-Cajun style that set the brand apart. Guests dig into bags of crab, shrimp, crawfish and sausage doused in signature sauces, eating with their hands at a vibrant, family-friendly table. The menu broadened over time to include po'boys, lobster rolls, bowls, baskets and sandwiches, but the messy, communal seafood boil remained the centerpiece and the brand's calling card. Lou, who had run the successful C-Fu Gourmet in Chandler, served as chief executive from the start, and was soon joined by Andy Diamond as president, a partnership that built out the financials and proved the concept could travel beyond a single store. After establishing a cluster of restaurants around Phoenix, Angry Crab Shack turned to franchising, expanding across Arizona and into Alabama, Georgia, Nevada, Texas and Washington as its hands-on, flavor-forward formula caught on. In 2023 and 2024 the brand went international, opening in London, England, and set its sights on still more markets, eyeing the Persian Gulf states, the Pacific Rim and beyond as it pushed past its first decade. From a single Mesa shack, Angry Crab Shack has grown into a fast-rising national and increasingly global seafood-boil chain, a 2013 original that turned a former football player's restaurant savvy and a love of bold Asian-Cajun flavor into one of the most distinctive concepts in casual dining. That novelty, paired with affordable pricing and a lively, get-your-hands-dirty atmosphere, kept new locations busy from opening day and helped fuel the brand's rapid franchise growth.
