When the Pierre Victoire franchise model collapsed at the end of the 1990s, Beacham and Whitehead negotiated to keep their thriving restaurants and continued as an independent bistro group, formally rebranding as Le Bistrot Pierre in 2005. Backed at various points by outside investment, the group expanded to around twenty restaurants across England, built on freshly prepared Anglo-French dishes using locally sourced ingredients.
