The legacy of pitmaster Christopher "Stubb" Stubblefield runs through every corner of Stubb's Bar-B-Q, the Austin barbecue restaurant and live-music complex at 801 Red River Street whose indoor stage is known simply as Stubb's Indoors. Stubblefield had run a legendary barbecue-and-music joint in Lubbock, where regulars included Willie Nelson, Muddy Waters and Johnny Cash, before bringing his sauce and his name to Austin in the 1980s. When he died in 1995 he had been planning a new restaurant and music venue on Red River; friends and family opened it the following year in a building dating to the 1850s, in the heart of what is now the Red River Cultural District. The site combines several dining rooms and bars across two levels with two stages: a 2,500-capacity outdoor amphitheatre out back and the smaller indoor room that hosts shows year round. The indoor stage, a standing room with a capacity in the region of 150 to 250, is where rising bands and touring acts play on nights when the weather or the bill calls for an intimate space. It runs music most nights of the week and forms part of a venue that also serves Texas barbecue and is famous for its Sunday Gospel Brunch, where a Southern buffet is set to the sound of top gospel choirs. While the outdoor amphitheatre has welcomed the likes of Lady Gaga, Foo Fighters and Adele, the indoor room keeps the venue's grassroots music spirit alive, packing crowds close to the stage in a historic building. Booked as part of the wider Stubb's operation and a short walk from the Austin Convention Center, Stubb's Indoors remains a defining stop on the city's live-music map. The 1850s structure had many lives before barbecue, serving over the decades as the 1960s club Watutsi, the 1970s music spot One Knite, a furniture warehouse, a junk shop and a bookstore in the Frontier Commercial style. Stubblefield himself had spent years in Austin building a name and selling the rights to his signature sauce to great success before his death. Inside the modern operation, an indoor space called Liberty Lunch carries the name of a fabled lost Austin venue, and the famous Sunday Gospel Brunch sets a Southern buffet to live gospel choirs. The indoor stage keeps that grassroots tradition going, putting upstart bands within arm's reach of the crowd.
