click to manageThe Beer Carpenter started in a run-down Norrebro room with a basement brewery and a dream. Olsnedkeren opened in 2012 at Griffenfeldsgade 52, where founders including hobby-brewer Simon Toft Hansen poured beer straight from the tanks downstairs to the taps upstairs - brewing at least weekly, often on ideas suggested by the customers themselves, so the board changed faster than most bars change their specials. Demand outgrew the cellar: production moved to a proper brewery in Skaevinge outside Hillerod, complete with automated canning line, while the Griffenfeldsgade bar stayed on as the operation's soul and taproom. Eighteen rotating taps plus a can fridge carry the range - juicy IPAs, barrel-aged stouts, berry sours and spiced experiments with unconventional names like Jutland's Dollars and Smoke, Wheat and Horn Music - mixing house brews with guests. Over the years the brewery has produced more than seventy collaborations with breweries in Denmark, New Zealand, the USA, the UK, Belgium, France and Germany, including Copenhagen names like ABEN and Flying Couch. The room keeps its second-hand charm - furniture from thrift stores, tables and bar built from recycled mill wood from Haderslev - and the calendar runs quizzes, music bingo and live concerts, plus guided tastings of seven beers with the bartenders storytelling. Happy Monday serves a large beer at small-beer price, hours stretch to 03:00 on weekends, and the location between Norrebrogade and Assistens Cemetery puts it at the heart of the district's beer crawl. Within Copenhagen's crowded craft-beer map the house holds a distinct position: less polished than the destination taprooms, more productive than the bottle-shop bars, and priced for the neighbourhood rather than the pilgrimage. The experimental cadence set in the basement years survives at the Skaevinge brewery - small batches, fast turnover, ideas over consistency - which keeps the Griffenfeldsgade taps genuinely unpredictable and the regulars loyal to the surprise as much as to any single beer.
