The name comes from mid-century proprietor Scoot Ivy, who ran the room with partner Red Schuman when it served rail workers and East Austin's working neighbourhoods; the low brick building and its hand-painted signage still read as the saloon it was. The 2019 C3 renovation rebuilt the stage, added permanent bars and improved sightlines across the yard while preserving the original saloon structure, and the venue's food programme rotates local trucks through the lot - the modern Austin formula applied to the city's oldest continuously licensed corner.
